Stuffing Recipe

The best stuffing in the World!!

This stuffing is delicious! You can stuff a fairly large turkey with this recipe. It should feed about 10 people but don't worry about having too much, its great refried as leftovers. You could use any of our pâtés, it doesn't have to be the Tequila & Cranberry. Also other dried fruits may be used in place of cranberries or even change the nuts. We used pistachios instead of walnuts, that made it even more fab than fab!
Ingredients
  • 230g (8 oz) cubed wholemeal toast
  • 230g (8 oz) sausage meat
  • 230g (8 oz) Chicken Liver, Tequila & Crannberry Pâté (or another flavour)
  • 1 medium onion, finely chopped
  • 100g (4 oz) Walnuts, roughly chopped
  • 4 leaves of fresh sage, chopped
  • 1 sprig of fresh rosemary, chopped
  • 1 sprig of fresh thyme, chopped
  • 1 large apple, cored and chopped
  • 100g (4 oz) dried cranberries
  • 1 small bunch fresh parsley, minced
  • 175ml (6 fl oz) turkey stock
  • 50g (2 oz) unsalted butter, melted

  • Method

  • Make sure your bread is well toasted and allow to cool. This is to dry out the bread. Put the toasted bread cubes to one side.
  • Put the sausage meat and pâté into another bowl and mix together with a fork. Add the onion and fresh herbs and stir into the mix to blend flavours.
  • Add the bread cubes to the sausage and pâté mix in the bowl. Mix in chopped apple, dried cranberries and walnuts. Drizzle with turkey stock and melted butter, and mix lightly. Spoon into turkey to loosely fill.
